Make potstickers with butter lettuce and orange segments for a quick lunch
Potstickers are Asian dumplings which have a center filling of meat, vegetables, or combination of both. It can be boiled, steamed or fried and eaten with soy sauce or specially made dumpling sauce. You can choose to make these from scratch or buy the frozen potsticker bags available at the mainstream grocery stores. I use the frozen potstickers which are simple to prepare and makes a nice addition to a meal. Add potstickers to a bed of sweet butter lettuce for a quick, light, and nutritious lunch. Throw in some orange segments and my favorite salad dressing, and viola, lunch is ready in less than 20 minutes.

Follow this easy potsticker salad recipe
Add 2 tbsp. vegetable oil in non-stick pan on medium-high heat
A non-stick frying pan with lid is best for cooking potstickers
Regardless of the name implies, you really do not want the potsticker to stick to the pan.
My choice of frozen chicken and pork potstickers
Add frozen potstickers flat side down - Do this for about 1 minute
Potstickers should be frozen when placed straight to the frying pan. Do not thaw potstickers as these will cause them to stick together. The name potsticker is a misnomer and you really do not want them to stick to the pan. Hence, a little oil is added to the non-stick pan to brown the dumplings.
Add 6 Tbsp. or 1/3 cup water - Enough to cover potstickers halfway
Cover and simmer fo 6 minutes - Most of the water should have evaporated
During this stage, the potstickers have been boiled and steamed at the same time. The potstickers will expand and the meat and vegetable filling become juicier.
Remove lid and brown on all sides - Wrapper becomes crunchier this way
Browning the wonton wrapper creates a crispier potsticker with a plump and tender filling.
Butter lettuce is also known as Bibb or Boston lettuce
Butter lettuce has a slightly sweet buttery flavor. It has large loose heads with soft folded leaves and make great bed for various salads. It is a great source of Vitamin A and K and folate. You can take a washed head of butter lettuce, tear the leaves apart and make a bed of salad.
For this recipe, I chose to use the washed, torn and packaged sweet butter lettuce for ease in food preparation. Prepare butter lettuce leaves in a salad bowl.
Transfer potstickers to a bed of butter lettuce, add orange segments and your favorite dressing
The orange segments adds a tangy flavor to the salad. Splash your favorite salad dressing and lunch is ready.
