Easy no-bake creepy gelatin eyeballs recipe
These no-bake creepy halloween eyeballs are so easy to make and are frighteningly delicious. These are made of lime gelatin and cream cheese mixture with raspberries stuffed with blueberries for the irises and pupils. There is no need for the melonballer to create the rounded eyeballs or icing to add to get the ghoulish effects. I used the refrigerator egg tray as the eyeball mold which has one rounded side and a one flat side.
Here is my version of the halloween eyeball recipe complete with big pictures and easy-to-follow instructions. This will raise a few eyebrows at your next party.
This is a no-bake recipe and super easy to make. The kids will love to help making these and cannot wait to sink their teeth into these ghastly eyeballs.
Ingredients
- 3 oz. lime gelatin
- 8 oz. cream cheese
- 1 cup boiling water
- Fresh raspberries and blueberries
Instructions
- 1. Spray the egg tray lightly with vegetable oil. Wipe off excess.
- 2. Stuff a blueberry into the center of each raspberry. Make 12. Assemble the raspberries, blueberry-down down in the egg tray.
- 3. Dissolve 3 oz. lime gelatin into 1 cup of boiling water.
- 4.. Soften one 8 oz. block of cream cheese in a bowl.
- 5. Beat at medium speed with hand mixer for 30 seconds to break up cream lumps until blended. Tiny specks of cream cheese are expected.
- 6. Gently pour into the egg tray. There will be enough leftover gelatin-cream mixture to fill two ramekins. Make extra stuffed raspberries (6 per container) and place on the bottom of the ramekins. Chill for 1.5 hrs.
- 7. Remove egg tray from the refrigerator and make this sit on warm water in the sink for a minute. Put just enough warm water to cover the bottom of the egg tray. Do not leave longer than stated as the gelatin mixture will begin to melt.
- 8. Gently loosen up the eyeballs with the edge of a metal spatula. Lift and put in individual cupcake liners. Carefully scrape the top of the eyeballs to expose the blueberries.
- Serve and enjoy.
Step 1 - Grease refrigerator egg tray with vegetable oil - Necessary prep work
Grease the removable refrigerator egg tray with a vegetable spray. Wipe off excess with tissue paper.This will ensure that the gelatin mixture will not stick to the sides. Since I only have one egg tray, this recipe will make a dozen green monster eyeballs.
Step 2 - Fresh raspberries and bluberries ready to be stuffed - Yummy and healthy fruits
Carefully stuff one blueberry into the bottom hole of a raspberry. Since the holes vary in sizes, pick the smaller blueberries to fit into the smaller raspberry holes and larger ones for the bigger holes. This will prevent tearing the raspberry sides apart.

Now you must admit these bloody-red irises and pupils are beginning to look spooky. Note that the raspberries are beginning to "bleed." Raspberries are fragile and should not be overly handled. But these are perfect for bloodshot eyes.
Assemble the stuffed raspberries in the egg tray - Set aside
Place one stuffed raspberry with the blueberry side down in each of the egg cups. The great thing about the egg tray is the ovate bottoms hug the fruits and keeps them centered. But again, monster eyeballs are weird and irregular. If some shifted a bit in the tray, do not fret over it.
Step 3 - Boil 1 cup water and dissolve 3 oz. lime gelatin
I zapped the cup of water in the microwave on high power for 2 minutes. Depending on your microwave oven, this may take longer. You may choose to boil water in a small kettle too.

Stir and make sure that the gelatin granules are all dissolved.
Step 4 - Soften 8 ounce block of cream cheese - To ensure it is smooth and creamy
Place the 8 oz. block of cream cheese in a bowl and soften. This can be done at 50% power in the microwave oven for 25 seconds but be careful not to leave it in there too long to avoid melting the cream cheese. Or you can choose to beat this with a rubber spatula to soften.
Step 5 - Beat the cream cheese and gelatin together
Pour the dissolved lime gelatin into the bowl of cream cheese. With an electric hand mixture, beat the dissolved gelatin and cream cheese together at medium speed for 30 seconds to break up the cream cheese lumps. Tiny specks of cream cheese are to be expected.
Step 6 -Pour mixture into egg tray mold
Carefully pour the gelatin mixture into each egg cup. The mixing bowl has a pouring spout which makes it convenient to fill the mold and avoid spillage. Using a small ladle or spoon would have been more trouble.
Extra mixture to fill 2 ramekins
Pour the dissolved lime gelatin into the bowl of cream cheese. With an electric hand mixer, beat the dissolved gelatin and cream together.There will be extra gelatin mixture to fill 2 ramekins so nothing goes to waste.

Time to chill out - About 1.5 hrs. in the refrigerator
Chill the prepared gelatin mixture egg tray in the refrigerator for about 1.5 hours. This will ensure that lime gelatin-cream cheese mixture is set and firm before unmolding.
Step 7 -Time to loosen up. - Warm water treatment
Take the chilled egg tray from the refrigerator and let it sit in warm water in the sink just enough to cover the bottom for about a minute. This will loosen up the gelatin mixture from the egg tray sides. Do not leave it longer than necessary or the gelatin will begin to melt. And what happens if you goofed? Just put the tray back in the refrigerator to allow the mixture to set.
Loosen edges with a spatula - Easy does it
Greasing the egg tray with vegetable oil is not enough to loosen the eyeballs. After removing the tray from the warm water bath, gently run the edge of a metal spatula around each eyeball to lift it up. I put these on foil cupcake liners so these make convenient individual servings.
Step 8 - Scrape top of eyeballs to reveal the blueberries - Here we go! A dozen oogling ghoulish monster eyeballs
None of these eyeballs will be perfect and no two will look alike. Afterall, zombies, ghouls and monsters were made to look imperfect. Enjoy.
